let me begin with... i'm no martha stewart! so after work last night, i come home and think, "what to make for dinner?" i decide to do a casserole type of dinner so that i can just throw it all in a dish, bake it, and play with rivers. so i start with cream of chicken soup, then add some uncooked rice. then on second thought, maybe i should take the rice out & cook it separately. so i strain it out as best as i can and start a pot of rice on the stove. back to my "casserole" - i add chicken, then peas, consider carrots, but no, jeremy's not a big fan. ok - thats good, chicken & peas are fine, i'll stir the rice in later. oops - forgot to preheat the oven. (turn on oven) and finally stick in the casserole. jeremy comes home and cautiously asks what's for dinner. when i tell him he says, "should i just go ahead and bake that frozen pizza?" i reassure him, no, it will be fine. then decide to also make corn on the cob. so i get the big pot out, fill it with water, and turn on the heat to get it boiling. i check on the rice and oh my - the water is all gone, its done. i look in on the chicken - not even bubbling or looking close to done. jeremy tells me he's starving (didn't take lunch break) and rivers is begging for yogurt, crackers, banana, anything... uh oh, dinner is no where close to being done and the boys are ready to eat! i stir the rice and give it a taste test - yuck! its still hard. fail. throw away. ok - give up on casserole dinner, get out the pizza. start cooking the pizza & then decide that since i already have the big pot of water boiling, why not go ahead and get a lasagna ready for tomorrow? so instead of corn, i boil noodles, begin cooking ground turkey. pizza is then done - well done (no not well as in good, well as in hard). we sit down to eat the yummy cardboard pizza, meanwhile i've put the "casserole" back in the oven. we can always eat it later in the week?! when gross pizza is gone i go back to the lasagna. get to the top layer only to realize i can't count - i'm missing 1 noodle. oh well - i make do and add extra cheese. so 2 hours after i started the easy, quick casserole, i had a very messy kitchen, much frustration on my part, and 3 crappy meals... hello monday!
